HOLIDAY TRADITIONS WITH SPIKED COQUITO

The holidays have been my favorite time of year ever since I was a little girl. Once Thanksgiving rolled around I became filled with excitement, excited to bake gingerbread and peanut butter cookies with my mom, shop for Christmas presents, visit Santa and so on. Christmas for my husband and his Hispanic family was a little different than ours. I love hearing about all the different ways people celebrate holidays and the traditions their family adopts.

My husband’s family always celebrated Christmas on Christmas Eve with a large family gathering. He remembers exchanging gifts at night and while it was a huge family celebration, it wasn’t centered around Santa like it was for me and my family. Between his abuela and tias, there were homemade buñuelos and empanadas, as well as, coquito spiked with rum.

As a parent, I love being able to mix old and new family traditions to create lasting memories for my kids. Our diverse cultures expose our children to so much and I couldn’t be more thankful for that. While I LOVE all the delicious food my husband’s family makes, coquito is one thing I look forward to most during the holiday season.

If you’re not familiar, coquito is a drink that originated in Puerto Rico during Christmas, but still remains a holiday drink in other Hispanic cultures. Coquito is made with sweetened condensed milk and cream of coconut milk giving it a sweet, mild coconut flavor with a dash of cinnamon. Some recipes call for egg yolks to be combined with the milk which creates an even creamier, thick drink similar to eggnog. For the purpose of simplicity, since I know we’re all looking for that during the holidays, I thought I’d share my version of coquito without the yolks and made with NESTLÉ® LA LECHERAⓇ Sweetened Condensed Milk.

I was able to find all the ingredients to make this delicious coquito recipe from my local Publix. The LA LECHERA Sweetened Condensed Milk is available in either a 14 ounce can or easy squeeze bottle (11.8oz) and found in the baking aisle. COQUITO SPIKED PUERTO RICAN EGGNOG

Ingredients:

1 12 oz can evaporated milk

1 14 oz can LA LECHERA Sweetened Condensed Milk

1 15 oz can cream of coconut

1 tsp cinnamon

⅛ tsp nutmeg

1 tsp vanilla

½+ cup of white rum

Instructions:

Blend evaporated milk, sweetened condensed milk and cream of coconut on high until mixed well.

Add cinnamon, vanilla, nutmeg and rum. Blend to incorporate.

Pour into a glass jar or pitcher and refrigerate for at least one hour.

Shake well before serving. Garnish with a cinnamon stick.
