The school year is in full swing for us and has been for a month now. Even though we’re getting into our groove, there are still some really busy days that don’t allow for much meal planning. So whether you struggle with finding quick meals for lunch or dinner, I’ve got you covered with three different quick week day meal options packed with nutrition.

I received a Good Eats box recently with a couple of my favorite brands along with a new one to try (and is now added to the favs list). Some frozen meals don’t always get the best reputation, but don’t rule out all frozen foods entirely! There’s always some exceptions to every rule.
Meal 1: Birds Eye Veggie Made™ Chicken Alfredo
Birds Eye vegetables have been a long time favorite of mine. The Chicken Alfredo bowl is made with pasta from 100% real vegetables and so delicious with grilled white meat chicken, broccoli, carrots and peas in a creamy alfredo sauce. This chicken bowl is such a flavorful alternative for frozen meals and one I definitely recommend keeping on hand for busy days. As much as I try, I still struggle at times eating the right amount of veggies. This meal contains a half cup of vegetables per serving!
