5 Minute Homemade Ice Cream + Summer Nights

Now that warmer temps are upon us it was time to pull out the ice cream machine!! I love making homemade ice cream! I know exactly what’s in it and can reduce and even eliminate sugar for the kids! This time I even made it dairy free!

Both kids were/have been dairy free for at least the first 10 months of their lives due to milk protein intolerance. Isabella outgrew this a little before a year, so we’ve been testing out Gabriel here and there. So far he hasn’t seemed to have any reaction to yogurt or cheese. Even though he seems fine with dairy now I still wanted to test out this ice cream with coconut milk. I have been loving coconut milk in my coffee! Try it, trust me! It is not overly coconuty at all.

So back to the ice cream. Seriously 2 ingredients, a food processor (like this one), and an ice cream machine (this is what I use) is all you need.

As a special treat I drizzled a little chocolate syrup on Isabella’s ice cream…which made it on her jammies and somehow on her forehead!

After Gabriel went to bed, Isabella and I enjoyed our special treat outside and snapped a few goofy photos. I am totally looking forward to this one on one time with my girl during these longer nights. Bubbles, evening swims, bike riding, sweet homemade treats…all things I’m looking forward to this summer!
