I am about two years late on the pressure cooker train, but I couldn’t be happier that I finally made the plunge. If you are a busy parent with limited kitchen storage space, then I highly recommend you check out a multi-cooker like the Zavor LUX LCD. Within the last month, we’ve enjoyed endless quick weeknight meals, slow-cooked meats, and one-pot dinners.

Being completely new to the idea of a multicooker, I was impressed with the LUX LCD’s simple LCD interface. It was super easy to operate and clearly showed whether it was preheating, cooking on the selected function or warming. The entire unit and lid remain cool to the touch while in use. 

I will be starting to share some more of my favorite healthier (FWTFL approved) meals using this kitchen gadget, along with the basic (but perfectly sweet and yummy) oatmeal recipe shared below. Easy Pressure Cooker Oatmeal Recipe

I don’t know what it is, but I can’t make stove top oats that won’t spill over. Not even if I watch them like a hawk. Creating a batch of oatmeal in the pressure cooker was by far the easiest way I’ve found to prepare them. I stored mine for the week in individual 1-cup mason jars, easy to grab-and-go. Top with your favorite fresh fruit, raisins, nut butters, and chopped nuts. If you need a little extra protein, try adding a scoop of collagen powder to your jar. 

Ingredients:

1 1/3 c GF Old-Fashioned Oats
1/4 c organic brown sugar
1/4 tsp salt
2 tbsp unsalted butter
4 c water
 

Directions:

1. Grease your pot with a little bit of butter to prevent sticking.
2. Combine all ingredients in your pressure cooker.
3. Lock on the lid and cook on high for 20 minutes. Quick release pressure and stir in any liquid on top.
4. (Optional) Store in individual jars and add preferred toppings.
