Make ahead overnight breakfast sausage casserole is quick, easy and loaded with sausage, eggs, cheese, and English Muffins. Store in your fridge and bake the next morning.
Make ahead breakfast casseroles are my specialty. They’re perfect for holiday mornings, like Easter or Christmas. The kids can hunt for eggs and open their Easter baskets while the casserole bakes in the oven.
This one is packed with English Muffins, our favorite ground breakfast sausage, eggs, and cheese. So much YUM!
Ingredients
1 roll ground breakfast sausage
8 eggs
milk
1 c shredded cheddar cheese
1 package of English Muffins
How to Make the Breakfast Sausage Casserole
Cook the ground sausage and drain off excess grease.
Cut English Muffins into bite size pieces and layer into a 9 x 13 casserole dish.
Whisk together eggs and a splash of milk.
Spread sausage over top muffins and pour egg mixture over casserole.
Cover with foil and place in the refrigerator overnight.
In the morning, preheat oven to 375 degrees and bake for 60 minutes. Remove foil and top with cheese. Place casserole back into the oven until cheese is melted.
I did not add onions or peppers to mine. The best part about using Jimmy Dean pork sausage is that it is already perfectly seasoned making this recipe even easier.
Serve Easter brunch with orange juice and fresh fruit!
