These pear stuffed crepes sweetened with Truvia® are the perfect addition to your fall brunch table.
The tastes of fall are here and I couldn’t be more excited to start baking! While everyone is sipping on their pumpkin lattes and baking apple pies, I decided to step outside the box and take advantage of the season’s sweet fresh pears.
My kids have been snacking on pears lately, and I had a few extra to use before they went bad. They were the perfect addition to a breakfast recipe I’ve been wanting to try – stuffed crepes! If you’ve never tried to make crepes before, don’t be discouraged! Crepes are actually REALLY easy to make and extremely hard to mess up!
If you loved my last baking recipe – Blueberry Oatmeal Muffins – you’ll love this one too! This reduced sugar recipe is made with Truvia Natural Sweetener, a calorie-free sweetener made with stevia leaf extract.
Pear Stuffed Crepes
Crepe Batter Ingredients:
1 c flour
2 eggs
1-2 tsp Truvia Natural Sweetener
¼ tsp salt
1.5 c milk
1 tbsp unsalted butter
Pear Filling Ingredients:
2-3 fresh pears, diced
2 tsp vanilla extract
2 tbsp Truvia Natural Sweetener
2 tbsp unsalted butter
Ground cinnamon and nutmeg to taste
Cream Cheese Filling Ingredients:
1- 8oz package of cream cheese, softened
Milk or heavy cream
½ tsp vanilla
1-2 tsp Truvia Natural Sweetener
Directions:
1. Slowly whisk eggs into flour. Add Truvia Natural Sweetener and salt, then gradually add milk. Let batter sit for 20-30 minutes at room temperature.
2. Add butter to a skillet. Pour ¼ cup of batter into the hot skillet and swirl to create a thin layer. Cook for 2 minutes and flip for 1 minute on the other side. Remove from pan. Add more butter and repeat with the rest of the batter.
3. To make the pear filling: Melt butter in the pan and add diced pears. Sprinkle Truvia Natural Sweetener over pears and cook until softened. Add vanilla, nutmeg, and cinnamon. Stir to combine.
4. Cream Cheese filling: Combine all ingredients until smooth.
5. Take a crepe, spoon cream cheese mixture onto the crepe and top with pear filling. Fold crepe in half and in half again. Top or serve with fresh fruit.
The warm pears make the cream cheese filling soft and gooey. Perfection!
