Toddlers can be so PICKY! I remember my oldest at her first birthday party chowing down on pulled pork and other sides. Friends were so amazed at how well she was eating and what she was actually eating. I should have know it was too good to be true. We entered a truly hard time shortly after she turned 3. Now my youngest is into mimicking her and has decided that if she doesn’t eat her vegetables than he shouldn’t have to either. Motherhood really brings out the creativity in you that’s for sure! I’ve come up with some trick or treat snack and meal ideas for my little testy toddlers that include Garden Lites!
Kids need their vegetables right? But eating them in true form seems to be a thing of the past. I shared our new found love of Garden Lites not too long ago. I’m so happy to have found something my kids will actually eat and I’m not at all ashamed to be tricking my kids into eating a serving of veggies in something they consider a treat! We incorporate one of Garden Lites varieties in our snacks and even mealtimes. These muffins are made with 1/3 vegetables and gluten/dairy/nut free! The blueberry Garden Lites are lighter in color so you can see the little specs of veggies in there, but you definitely can’t taste them!
Here are some healthy ideas for tricking your kids into eating veggies.
Snacks:
1. Yogurt with Garden Lites Blueberry Oat muffin
2. Chocolate Garden Lites muffin with a handful of strawberries
3. Fruit/veggie baby food pouch with a Garden Lites muffin (extra hidden veggies in this snack!)
Breakfast:
1. 1 egg, 1-2 sausage links, 1 Garden Lites muffin
2. whole grain cereal with milk + Garden Lites muffin
Lunch:
1. Turkey and Cheese roll-ups, sliced apples + Garden Lites muffin
2. Hidden Veggie Mac & Cheese + 1 Garden Lites muffin
3. All Natural chicken nuggets, cheese cubes, fruit cup + 1 Garden Lites muffin
Your kids are totally going to think they’re winning here, but inside you’ll be doing your evil laugh! Muah-ah-ah! These muffins are great for on the go too. I like to grab a box and toss it into the diaper bag when we head out to the park or for a short day trip. By the time you’re ready to eat them, they’ll be defrosted and ready to go. These are the perfect little snack for me to take to work too! I’ll be honest…I’m not to crazy about a lot of vegetables either so these work well for adults too.
I found my Garden Lites muffins at Publix. You can find yours in the freezer section of your nearest Publix, Stop & Shop, Giant, Shop-Rite, HEB, Kroger or Costco.
