WEEKEND RECAP + GUAC BURGERS

Anyone else feel like the weekend just flew by?! It’s been a while since I’ve done a weekend recap and honestly, we didn’t do anything wild or extravagant. Saturday morning I forced myself to get up at 6 am to go to the gym before my hubby left for work. My daughter was up when I got back and suckered me into playing with her while I sipped on my coffee. We lounged for a bit after my youngest got up before heading out to run a couple errands. With only a few weeks to go before my brother in law’s wedding we’re kicking it in to high gear with prep. The kids need shoes for their flower girl & ring bearer duties, as well as I do to go with the bridesmaids dress. The rest of the day they played and I cleaned. See…nothing wild there.

Sunday was a gorgeous day so the whole family went down to Clearwater to catch a Phillies spring training game. Driving by the causeway and seeing everyone out on the water really gave me the itch to get to the beach! It has been far too long! The kids fell asleep on the way home and I knew they’d be starving when they woke up. We decided on grilling up some burgers and hot dogs and my favorite is adding some homemade guacamole to it! I didn’t have the traditional guac ingredients, but what I whipped up was no short of amazing and flavorful! The simple recipe is shared below!

Healthy, Bunless Guacamole Burger

Ingredients

  • ripe avocados
  • grape tomatoes
  • fresh garlic
  • fresh parsley
  • salt
  1. Remove the avocado from the skin and mash with a fork until only small sized chunks remain.
  2. Dice the tomatoes fairly small.
  3. Chop about a tablespoon of fresh parsley.
  4. Add all ingredients to the mashed avocado including some minced garlic and salt to taste.

Assemble

I opted to omit a hamburger bun and placed a handful of fresh spinach on a plate to which I topped a hamburger patty. Add a dollop of the guacamole and if you like a kick, a couple dashes of hot sauce on top really amps up the flavor!
